Regency Baking Studies

TAFE SA Regency International Centre Bakery Program provides a broad range of specialist bakery courses for pastry and patisserie professionals, industry groups and other interested individuals.

The Program equips future bakers and pastry cooks with the skills, knowledge and practical experience to work anywhere in the world. Training is complemented by the world-class practical facilities at TAFE SA Regency International Centre which reflect current industry standards.

Success of Bakery graduates can mainly be attributed to the hands-on nature of the Program. Under direction of professional bakers and pastry cooks, together with current industry specialists, students spend at least 75% of their training time each day preparing and baking an extensive range of baking items in a fully commercial bakery.

The Bakery Program has close links with industry and has been a major influence in the development of a national curriculum for apprentice bakers, pastry cooks, bakers, patisserie workers and other specialised areas both in Australia and internationally.

Facilities

The Bakery Program at TAFE SA Regency International Centre boasts the largest and most modern training bakery in Australia. The custom designed and built  bakery workshop accommodates 16 to 18 participants, providing students with a safe, comfortable and positive training environment to optimise their learning outcomes. All equipment used in training is the most technologically advanced bakery equipment available.

Bakery students can access state-of-the-art equipment such as:

  • Daub (Moffat) automatic dough rounder/divider 
  • Latest Rotel II oven 
  • Fully programmable Miwe Condo deck oven 
  • Dedicated Hobart planetary mixers for each student
  • Spacious and secure assimilated workshop
  • Rondo pastry break

  • Two industrial fryers for donut and fried yeast goods training

Students prepare for a career in the baking industry by familiarising themselves with modern equipment and facilities used across industry. This exposure is complemented by the intensive training delivered by a dedicated team of professional bakery lecturers experienced in all facets of baking knowledge, skills development and training. The combination of industry standard equipment and experienced educators ensures  Bakery graduates are more employable and keenly sought by industry.

Employment

A qualification from the Bakery Program at TAFE SA Regency International Centre opens the door to the baking industry where graduates can obtain employment in an extensive range of positions. With the more academic or scientific bakery qualifications it is possible to gain employment in research and development companies. 

The baking industry currently offers exceptional employment opportunities. There is a strong demand for highly trained persons as the industry has been identified by the Federal Government as a national skill shortage area. Employment options are diverse with job security likely for highly skilled graduates who are practical, creative and dedicated. 

Retail Baking graduates can work as bakers or pastry cooks in supermarket bake houses, hot bread shops, in-store bakeries, plant bakeries (including Tip Top and Buttercup), bread and cake franchises (including Bakers Delight, Brumby's and Cheese Cake Shop), restaurants, cafes, hotels (both local and international), catering institutions and hospitals

Patisserie graduates can expect to find employment in resorts, international hotels, cruise ships, world class catering and convention centres, high class restaurants and specialist patisseries and cafes. Highly skilled Patissiers are sought after all over the world.
